Vanishing Oatmeal Raisin Cookies
1 1/2 cups all-purpose flour 3 cups quick or old fashioned oats, uncooked 1 teaspoon cinnamon 1 teaspoon baking soda 1/2 teaspoon salt (optional) 4 tablespoons flaxseed meal (optional) 1 cup butter, softened 1/2 cup granulated sugar 1 cup firmly packed brown sugar 2 eggs 1 teaspoon vanilla extract 1 cups raisins
Preheat oven to 350 °F. In a small bowl, combine flour, baking soda, cinnamon and salt. Mix well and set aside. In a large mixing bowl, cream together butter and sugars until creamy. Beat in eggs and vanilla extract. Gradually blend in flour mixture. Stir in oats, flaxseed and raisins. Mix well. Drop by rounded measuring tablespoonfuls onto ungreased cookie sheet. Bake 10 to 12 minutes or until golden brown. Cool 1 minute on cookie sheet. Remove cookies from sheet to wire rack. Let cool completely.
